Refusing to even see you until you have both pledged your undying love for each other is just completely unrealistic. if you still want to be with her even through all of this then my advice is to try and work this out with her, if you guys get to a conclusion and can get past this together then thats a pretty good sign i guess that you should stay with her.
i dont think its a matter or both of you saying you forgive each other. i think you have to tell her how you feel about everything, basically tell her what you said in your question. how you feel like she doesnt care as much as you do, how you see the situation from your view and how the things that have happened seem really shady.
